A New Beginning!! Fried Modak

A new beginning to the blogging world praying to my इष्टदेवता  (Most Favourite God) Lord Ganpati.

The first post will be his favourite food MODAK..

Ingredients for the outer covering

1 cup Maida
1/2 tsp corn flour
1/2 tsp ghee or clarified butter
Salt to taste

Ingredients for the filling

1 cup grated coconut
1/2 cup grated jaggery
1/4th tsp cardamom powder
Little bits of dry fruits (pista, almond) about 2 tsp

In a bowl add the maida, cornflour, salt and ghee and bind in to a stiff but spreadable dough.  Keep it covered for 1 hour.

In a pan add jaggery and keep it on gas when the jaggery starts becoming soft, add the coconut and keep stirring till semi dry.  This process ensures the water doesn't ooze out while we fry the modak.

Pinch out marble sized balls from the dough and make small chapatis.  These chapatis should neither be thin or thick.  Ensure there are no holes or the chapatis don't get torn.

Fill 1 tsp of the filling in the chapatis and hold all the ends together forming tiny pleats and forming shape of Modak.  Finish preparing all the modaks.

Heat oil in a pan and when moderately hot add the modaks one by one ensuring there is no crowding.  Carefully turn till golden brown and crisp.  Keep monitoring the flame so that they are evenly cooked.

Once done offer it to your God and eat hot... These are made in odd numbers 11, 21 etc

Hope to see you all soon!!!!
